Healthy (ish!) Meals for the Lazy Chef

I’ve been trying to think of cooking as a form of self-care recently!

I’m quite possibly the laziest person ever when it comes to cooking. I like easy, quick recipes, & even then I might order takeout if I don’t feel like making something. 🤷🏻‍♀️😂

I’ve been trying to cook at home more recently & wanted to share a few of the recipes I’ve been making. These are all super simple, take little to no time at all, & are really good!

Burrito Bowls

  • Ground turkey (chicken or any kind of meat would work, too! Or leave the meat out & just do veggies!)
  • Onions
  • Rice (I like the kind you microwave in a bag for a minute & a half, haha!)
  • Shredded cheese
  • Whatever salsa you like!
  • Lime juice

Cook the meat in a pan. Cook the rice (or throw the instant rice in the microwave! Put into a bowl, top with your faves!

Greek Chicken Bowls

  • Chicken
  • Onions
  • Rice
  • Greek seasoning
  • Minced garlic
  • Lemon juice
  • Olive oil
  • Red wine vinegar

Cook the chicken (in a pan on the stove, in the oven, however you want!) Top with Greek seasoning! Cook the rice. While those are cooking, mix together lemon juice, olive oil, red wine vinegar, minced garlic, salt & pepper. This is all to taste so use however much you like! Throw it all into a bowl!

Chicken Apple Sausage + Roasted Veggies

Slice the sausage into small pieces, then throw them on a baking sheet with whatever roasted vegetables you like best! Bake at 400 degrees until the sausage is crispy, around 20-30 minutes (I just check it frequently to make sure it doesn’t burn!) I’ve been loving the Oven Roasters from Bird’s Eye, especially the sweet potato & onion one!
